Sudanese Peanut Stew

Ingredients

• 1 onion
• 2 tomatoes
• 3 tbsp groundnut paste
• 1 aubergine, cubed
• Lime juice
• Salt and chili

Method

   Soften the onion, add tomatoes and cook down.

   Add aubergine and a little water; simmer until tender.

   Stir in groundnut paste loosened with warm water.

   Finish with lime and chili.
